I've been trying to delete a poster for one of my movies, but it's like pulling teeth. I want put up a better one, but for some reason I can't delete it or make another image a primary.

Just report it (Overview -> Report) and wait until a mod has time to handle it. You can't mark an image as primary as a non-mod, but you sure can upvote good posters and downvote not-so-good ones.
