The fatal error you shared points to a missing WooCommerce internal trait, which usually happens when the update did not complete cleanly or when files are out of sync. The first step here would be to reupload the WooCommerce plugin files to ensure nothing is missing. You can do this by deleting the WooCommerce plugin folder and reinstalling the latest version from your dashboard or via FTP.
If the issue started immediately after the update, it would also be useful to temporarily roll back to the previous WooCommerce version that was working, confirm the site behavior returns to normal, and then attempt the update again. This helps confirm whether the update process itself is the trigger. A rollback plugin can help with this if needed.
For the variation issue and disabled Add to cart button, this can sometimes be related to JavaScript errors caused by plugin or theme conflicts after an update. Thank you for sharing your system status report. I had a look, and everything appears generally okay, though I notice you have quite a few active plugins which could potentially conflict with WooCommerce.
I wanted to check if you’ve had a chance to carry out the recommendations from my earlier reply. Just to recap, the next steps would be to try reinstalling WooCommerce to ensure all files are correctly in place. If the issue persists after that, it would be best to perform a plugin conflict test by deactivating all other plugins and testing, then reactivating them one by one to identify any conflicts.
This approach usually helps pinpoint what’s causing the Add to Cart button and variation issues.

We noticed the issue when using Variation Swatches for WooCommerce (see dedicated thread) and I see in your SSR you’re using this plugin. Could you try disabling the plugin to see if the issue persist?
If so, this is most likely related to the change we announced in Dev Advisory: Add to Cart button disabled by default in variable products in WooCommerce 10.5.
