The results obtained during the laboratory analysis of traditionally fermented milk were classified according to their groups and the discussion was done on the total bacteria counts, staphylococci bacteria as well as total and fecal coliforms, lactic acid bacteria, yeasts and molds.

But on average, more than 10% of the samples were found unsatisfactory in levels of total bacteria count.

As long as the total bacteria count is low and pathogens are absent it is acceptable.

A low total bacteria count in ewe milk were reported by Abd El Aal et al., [1] with 19 x [10.sup.2] cfu/ml and the lowest mean value were found by.

Another bacterial indicator commonly used in conjunction with the total coliform and fecal coliform tests is the heterotrophic plate count (HPC), also referred to as the total bacteria count, the standard plate count, or the agar plate count (Salvato et al., 2003; Stachecki & De Hann, 1997).

The researchers examined the composition of various yogurt ice cream products--their total solid, fat, protein, ash and carbohydrate content, as well as their viscosity, acidity, overrun, melting rate, heat shock stability, lactic acid bacteria and total bacteria count.
